Low Carb Meringue

Ingredients

  • 3 large egg Egg white
  • 1 tsp Lemon juice or vinegar
  • 1/4 cup Swerve Confectioners Sugar or to taste
  • 1 tsp Vanilla extract pure (or other flavouring)

Instructions

  • Preheat oven to 200 degrees.
  • Place eggs whites in bowl.
  • Add vanilla and lemon juice.
  • Beat until white and form soft peaks.
  • Add Swerve 1 tbsp at a time. Beat until stiff peaks and glossy.
  • Using a piping bag or tablespoon, portion onto parchment-lined cookie sheet.
  • Place in oven and bake for 15 minutes. Then turn the oven off and leave meringue in the oven with the door closed overnight.
  • If they are not dried out to your liking, turn the oven on to 200 for 10 minutes and then shut off and leave meringue in there for another couple of hours.

Notes

If you have granulated Swerve, erythritol or Monk Fruit sugar, just powder it by running it through a blender or food processor. It 'dissolves' into the egg white better.
My oven is hotter than it should be and I find it difficult to keep meringue white, even at the very lowest temperature. They still taste great! You can also make larger meringues in the shape of nests, and fill with whipped cream and berries after baking (Pavlova). If you can't let the meringue sit in the oven overnight, just bake it on the lowest temperature for 90-120 minutes. Net Carbs per Meringue: less than 1 gram
