Daikon Scalloped 'Potatoes'

My kids can't tell that this isn't actually made with potatoes. They go for seconds. Every time!

Ingredients

  • 1 medium Daikon radish (sliced into very thin rounds)
  • 1 large yellow onion thin slices
  • 4 medium slice bacon crumbled
  • 1/4 cup parmesan cheese grated
  • salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 3 tbsp whole wheat flour
  • 1 cup Whole milk 3.3%
  • 1/2 cup Heavy whipping cream 38% M.F.
  • 1/8 cup Butter salted (cut into small chunks)

Instructions

  • Preheat oven to 350.
  • Layer daikon and onions, sprinkling with salt and pepper, garlic powder, onion powder, bacon, parmesan and flour over each layer.
  • Pour milk and cream over top. Add a bit more if you need to fill the dish (I used an 8 by 8 pan and got 3 layers of daikon).
  • Scatter the bits of butter around the top.
  • Bake for 30-40 minutes. Stick a fork into it to test. If the fork goes in fairly easily (it won't ever get quite as soft as potatoes) it's done. Otherwise, bake for another 5-10 minutes.

Notes

My daughter suggests more bacon :) Net Carbs per Serving: 5.5 grams
