Quick Low Carb Omelette
This is delicious drizzled with my easy hollandaise sauce :)

- 2 large egg
- 1 tbsp Heavy cream 38% M.F.
- 1 tsp Extra virgin olive oil
- 1 cup Baby spinach
- 1/2 cup Cheddar cheese, sharp, shredded (or whatever cheese you prefer)
Heat oil in a small frying pan.
Meanwhile, mix eggs with heavy cream and salt and pepper, in a bowl and add to hot frying pan.
On one half of the egg mixture, place spinach and cheese.
Cook for a few minutes until the egg is firm enough to gently lift. Fold the 'plain' half over the top of the spinach/cheese half.
Cook a few minutes more to allow the cheese to melt.
Place on plate and drizzle with hollandaise sauce (optional).
Use other veggies if you like.
