Just in time for Valentines Day! This Low Carb No Bake Cheesecake is one of my favourite dessert recipes because it’s very quick to put together, requires no baking and has lots of flavour possibilities.

This no-bake cheesecake can be made in about 5 minutes. The simple vanilla version is delicious, especially topped with fresh fruit, but be sure to try variations by adding different flavourings. See my suggestions below.

Low Carb No Bake Cheesecake

This is a very rich dessert so the serving is small (approximately 1/2 cup). It's big on flavour!

Ingredients

  • 1/2 cup Cream cheese
  • 1/2 cup Heavy cream 38% M.F.
  • 2 tbsp Swerve Sweetener confectioners (adjust to your taste- powdered form works best here)
  • 2 tsp Vanilla extract pure (or use whatever flavour you like!)

Instructions

  • Whip the cream cheese until fluffy and smooth.
  • Add the whipping cream, sweetener, and flavourings.
  • Whip until creamy.
  • Portion into serving bowls and top with fresh fruit if desired.

Notes

Lime juice and zest would be good. You might need to add more sweetener. Cocoa powder with a bit more sweetener is another option. You could also puree some fruit (strawberries, raspberries, blueberries) and add that into the mix.
Most of the carbs in this recipe come from sugar alcohols (Serve) so I have calculated the net carbs by subtracting that amount.
