Happy Valentine’s Day! We usually think ‘chocolate’ when we think of this holiday, so here is a low carb chocolate lava cake with a whisper of cinnamon. It’s the perfect way to enjoy chocolate on this special day (or anytime) without messing up your blood sugar which is what eating a bunch of sugar-laden chocolate will do.

Cinnamon Chocolate Lava Cake

This low carb chocolate lava cake has a hint of cinnamon. It is quick to make and tastes decadent!

Ingredients

  • 1/3 cup Baking chocolate unsweetened
  • 1 tbsp Almond flour/meal Bob's Red Mill
  • 1/4 cup Butter unsalted
  • 2 medium egg Egg
  • 1 tsp Vanilla extract pure
  • 1/2 tsp Cinnamon
  • 2 tbsp Swerve Sweetener confectioners (depending on the chocolate that you use, and your preference for sweetness, you may need less or more)

Instructions

  • Grease the inside of 2 ramekins with butter (sides and bottom).
  • Melt chocolate and butter together.
  • Mix eggs in a bowl with electric mixer.
  • Add almond flour, vanilla and cinnamon.
  • Add chocolate/butter mixture and mix well.
  • Taste and add sweetener if desired.
  • Divide into the 2 ramekins.
  • Bake at 350 for 9-10 minutes. The top should be 'set' but the cake should still jiggle when you shake it.
  • Remove from the oven and let sit for 5 minutes.
  • Gently run the tip of a sharp knife around the circumference of the cake. Place a small plate upside down on top of the ramekin, and carefully turn it over, releasing the cake onto the plate.
  • Garnish with fresh fruit and whipped cream if desired.
