While listening to the radio on my way to work this morning, I heard that today is National Fettuccini Alfredo day. That is something that I haven’t eaten since I began eating low carb. Here’s my take on the classic Italian pasta dish, made with no-carb fettuccini made with konjac.
Low Carb Fettuccini Alfredo
This twist on a classic uses zero carb noodles (brand names include Miracle Noodles, Zeroodles, nuPasta) made with Konjac flour.

Ingredients
- 2 tbsp Cream cheese
- 2 tbsp Butter unsalted
- 4 tbsp Heavy cream 38% M.F.
- 4 tbsp Parmesan cheese grated
- 1/8 tsp Granulated garlic
- 1 pinch Nutmeg ground
- 1 dach Salt and Pepper or to taste
- 1 package Zero Carb Fettuccini use any brand and pasta shape you like
- 2 medium slice Cooked Bacon chopped- this is optional
Instructions
- Melt the butter and cream cheese in a small saucepan on low heat.
- Add the heavy whipping cream and parmesan cheese, and stir until fully combined.
- Season with garlic powder, nutmeg, salt, and pepper.
- Rinse and dry zero carb noodles. Add them to the sauce and heat.
- Add the optional bacon, a bit more grated parmesan and parsley if you like.
