They are made with real fruit and gelatin. They are healthier since they are not loaded with sugar, but gelatin also offer health benefits to your digestion, skin, hair, bones and joints. Gelatin also helps with blood sugar balance and can even help you sleep better.

Homemade Gummies: Low Carb and Healthy

These healthy, low carb gummies are made with fruit puree and gelatin. You can use regular unflavoured Knox brand gelatin or collagen powder that you find at a health food store.

Ingredients

  • 2/3 cup Raspberries pureed
  • 1/3 cup Raspberry juice or other juice
  • 5 tsp Gelatin dry powder unsweetened
  • 1/8 cup Monk Fruit in The Raw Natural Sweetener or other sweetener of choice- powdered is best for texture

Instructions

  • Put juice into small saucepan and add gelatin.
  • Gently heat while stirring until gelatin is dissolved.
  • Add this to the fruit puree. Taste and add a bit of Swerve or Monkfruit sweetener if desired.
  • Pour into silicone molds or into an 8 x 8 pan.
  • Place in fridge for 20-30 minutes until firm.
  • Optional Sour Coating: Mix 4 packages of lemon powder with 2 tbsp of Swerve and toss the finished gummies in the powder.

Notes

The product I use to make these sour gummies is called True Lemon/True Lime which is essentially powdered juice with no added sugar. They are meant to be added to water in place of fresh lemon or lime if you don't have that available.
They are REALLY sour! You'll need to add a bit of granulated or powdered sweetener for this recipe.
