I love meatballs and I love Rueben sandwiches….so I created this recipe to fuse both into a low carb meal.  The combination of sauerkraut and melted swiss cheese makes my mouth water even as I sit here writing about it 🙂

This sheet pan recipe allows the juices from the meatballs to flavour the shredded cabbage underneath. Delicious.

Use any ground meat that you like to make these meatballs. Sometimes I use just one kind of meat, but combining 2 or more enhances the flavour.

Sheet Pan Rueben Meatballs and Cabbage

Reminiscent of a Reuben sandwich without the bread.

Ingredients

  • 1 lb Pork ground, lean (choose any ground meat or combination that you like)
  • 1 lb Beef ground
  • 2 medium Egg
  • 1 cup Swiss cheese diced
  • 1 cup Sauerkraut drained and chopped
  • 1 tbsp Garlic powder
  • 1 tbsp Dijon mustard whole grain
  • 1/2 tsp Salt
  • 1/2 tsp Black pepper
  • 6 cup Savoy Cabbage shredded

Instructions

  • Preheat oven to 350.
  • Spread shredded cabbage on sheet pan and drizzle with olive oil. Season with salt and pepper.
  • Using your hands, mix all remaining ingredients together. Form into meatballs.
  • Place meatballs on cabbage on a sheet pan.
  • Bake at 350 for 20-30 minutes until meatballs are cooked thoroughly.
  • Serve with mashed cauliflower or shirataki rice if you like.
