I was craving apple ‘something’ the other day so I decided to try this out…an apple cinnamon chaffle. It definitely satisfied that craving, and with only a 1/4 of an apple, it’s still low carb!

A chaffle is a simple recipe of 1/2 cup cheese (I like mozzarella), 1 tbsp almond flour, 1 tsp baking powder and 1 egg…with whatever additions you want. Sounds crazy but it’s delicious!

Make a bunch ahead of time and freeze so that you have some for a quick breakfast or snack. However, it only takes a few minutes from start to finish so as long as you have the ingredients on hand you could easily whip up a chaffle in the morning.

Apple Cinnamon Chaffle

So simple and so delicious. Similar to an apple fritter but much healthier!

Equipment

  • Waffle iron

Ingredients

  • 1 large egg Egg
  • 1 tbsp Almond flour/meal
  • 1/2 cup shredded Mozzarella cheese
  • 1/4 small Apple chopped
  • 1 tsp Vanilla extract pure
  • 1/2 tsp Cinnamon
  • 1 tsp Swerve Sweetener (erythritol) confectioners

Instructions

  • Heat your waffle iron.
  • Add a bit of oil if necessary so it doesn't stick.
  • Spread the chopped apple on the hot waffle iron and cook until softened.
  • Mix all other ingredients and pour over softened apple.
  • Cook for 3-5 minutes in waffle iron or until it stops steaming.
  • Top with ICING if desired: 2 tbsp powdered Swerve, 1/4 tsp cinnamon, 1/4 tsp vanilla. Add just enough cream to make this pourable. Drizzle over the chaffle!
