Zoodles…not the sugary canned pasta dish that you ate as a kid but a delicious way to eat zucchini. I also like to add a spoon of asiago artichoke dip to this dish.
Include some chicken, steak or eggs to increase the protein and make this a complete low carb meal.
Pesto Zoodles
Add grilled chicken or steak to complete the meal.

Ingredients
- 1 medium zucchini spiralized or thinly sliced
- 1 tbsp butter salted
- 6 cherry tomatoes
- 1/4 cup basil pesto use more if desired
- 1/4 cup crumbled feta cheese
Instructions
- Melt butter in a frying pan.
- Add spiralized zucchini and tomatoes. Heat through.
- Add pesto and stir until combined.
- Transfer to serving bowl and top with crumbled feta.
