Fat Tuesday, Mardi Gras, Shrove Tuesday, Pancake Day….whatever you call it in your family, today is a good day for pancakes.
Really though, when isn’t it a good day for pancakes? It gets a little tricky when you’re eating low carb since a typical 4-inch wheat-based pancake has almost 18 grams of carbs. And then add the maple syrup or pancake syrup…yikes.
The main ingredient in these pancakes is sunflower seed flour. It’s less costly than almond flour and works really well is this recipe. If you can’t find it in the store, just buy some raw sunflower seeds and grind them yourself in a coffee grinder, food processor or blender.
This recipe makes approximately 8 medium-sized pancakes. They are hearty and filling so 2 pancakes per serving is plenty. At 12 grams of net carbs per serving of 2 pancakes, this is a much better alternative. I usually top them with some real whipped cream, sweetened with a bit of Swerve or stevia, or lots of butter or fresh fruit or ALL OF THOSE! Sometimes I just want a bit of real maple syrup. So I have it. And I enjoy every bite!
Keto Pancakes
Ingredients
- 3/4 cup Sunflower Seed Flour
- 1/4 cup Almond Flour Blanched (or more sunflower seed flour)
- 1/4 cup Ground Flaxseed golden if possible- it looks nicer 🙂
- 2 tbsp Erythritol (Swerve)
- 1 tsp Baking Powder
- 1/4 tsp Salt
- 1/4 cup Olive Oil or coconut oil
- 1/2 cup Whole milk 3.3% or coconut milk or almond milk
- 3 medium Eggs
- 2 tsp Vanilla extract
- 1 tsp Cinnamon optional
Instructions
- Mix everything together in a bowl with a whisk, or in a blender.
- Allow to sit for 5 minutes.
- Heat a pan on medium-high heat.
- Add a bit of coconut oil to the pan. When melted, lower the heat to medium.
- Use an ice cream scoop or 1/4 cup measuring cup to put batter in the pan.
- Cook until bubbles start to form on top, then carefully flip and cook the other side for 2-3 minutes.
- Serve with choice of toppings.
