This simple Greek Salad makes a delicious side dish. Even the dressing is made from scratch but takes no time at all.

Greek Salad

Ingredients

  • 2 cup cherry tomatoes sliced
  • 2 cup cucumber diced, not peeled
  • 1/2 cup red onion chopped- use less if you don't like these
  • 1 cup chopped orange bell pepper or use green, red or yellow pepper
  • 1/2 cup black olives sliced
  • 1/2 cup crumbled feta cheese (or more if desired)
  • 1/4 cup extra virgin olive oil for dressing
  • 2 tsp oregano dried (for dressing)
  • 1/4 cup white balsamic vinegar for dressing
  • 1/2 tsp salt and pepper for dressing, to taste

Instructions

  • Combine tomatoes, peppers, cucumber, onions and olives in a bowl.
  • Top with feta cheese.
  • Mix dressing ingredients in small bowl and drizzle over salad.
  • Toss to combine.
