I love meatballs and I love Rueben sandwiches….so I created this recipe to fuse both into a low carb meal. The combination of sauerkraut and melted swiss cheese makes my mouth water even as I sit here writing about it 🙂
This sheet pan recipe allows the juices from the meatballs to flavour the shredded cabbage underneath. Delicious.
Use any ground meat that you like to make these meatballs. Sometimes I use just one kind of meat, but combining 2 or more enhances the flavour.
Sheet Pan Rueben Meatballs and Cabbage
Reminiscent of a Reuben sandwich without the bread.

Ingredients
- 1 lb Pork ground, lean (choose any ground meat or combination that you like)
- 1 lb Beef ground
- 2 medium Egg
- 1 cup Swiss cheese diced
- 1 cup Sauerkraut drained and chopped
- 1 tbsp Garlic powder
- 1 tbsp Dijon mustard whole grain
- 1/2 tsp Salt
- 1/2 tsp Black pepper
- 6 cup Savoy Cabbage shredded
Instructions
- Preheat oven to 350.
- Spread shredded cabbage on sheet pan and drizzle with olive oil. Season with salt and pepper.
- Using your hands, mix all remaining ingredients together. Form into meatballs.
- Place meatballs on cabbage on a sheet pan.
- Bake at 350 for 20-30 minutes until meatballs are cooked thoroughly.
- Serve with mashed cauliflower or shirataki rice if you like.
