When eating low carb, we typically forgo the bun that comes with a hamburger and eat it wrapped in lettuce or on top of salad, and this tastes great. This Keto Bacon Cheeseburger Casserole is another delicious and unique way to enjoy the low carb burgerflavour without the bun. The typical hamburger toppings are right in the casserole…ketchup, mustard, pickles, bacon, onions and cheese…so yummy. I’d like to say that the flavour is even better the next day, but I’ve yet to have any leftovers to test that statement!

I like this casserole alongside a big salad, or with mashed cauliflower and veggies. You could also wrap this in lettuce and pick it up like a burger.

Keto Bacon Cheeseburger Casserole

Ingredients

  • 1 lb Ground beef
  • 1 cup Yellow Onion chopped
  • 1 Medium bell pepper chopped- use any colour. Add jalapenos if you like it spicy.
  • 2 clove Garlic minced
  • 2 oz Cream cheese
  • 2 medium egg
  • 1 tbsp Yellow mustard
  • 1 tbsp Tomato ketchup
  • 1/4 cup Chopped sweet pickles
  • 1/2 cup Heavy whipping cream 38% M.F.
  • 1 cup Cheddar cheese shredded
  • 1 cup Mozzarella cheese shredded
  • Salt and Pepper to taste
  • 3 Slices bacon cooked and crumbled

Instructions

  • Preheat oven to 350 degrees.
  • Place the ground beef in a skillet over medium-high heat. Add the garlic, onions, peppers and salt and pepper to taste.
  • Cook until the ground beef is no longer pink. Add the cream cheese. and stir until melted.
  • Place beef mixture into a baking pan.
  • Add the eggs, 1/2 cup shredded cheddar cheese, 1/2 cup mozzarella cheese, heavy cream, bacon, mustard, ketchup, and chopped pickles. Stir to combine.
  • Sprinkle the remaining 1/2 cup shredded cheddar and 1/2 cup mozzarella cheese on top.
  • Bake for 15-20 minutes or until the cheese begins to bubble.
  • Serve with a salad, mashed cauliflower or whatever veggies you like!
