This simple Greek Salad makes a delicious side dish. Even the dressing is made from scratch but takes no time at all.

Greek Salad
Servings: 4
Ingredients
- 2 cup cherry tomatoes sliced
- 2 cup cucumber diced, not peeled
- 1/2 cup red onion chopped- use less if you don't like these
- 1 cup chopped orange bell pepper or use green, red or yellow pepper
- 1/2 cup black olives sliced
- 1/2 cup crumbled feta cheese (or more if desired)
- 1/4 cup extra virgin olive oil for dressing
- 2 tsp oregano dried (for dressing)
- 1/4 cup white balsamic vinegar for dressing
- 1/2 tsp salt and pepper for dressing, to taste
Instructions
- Combine tomatoes, peppers, cucumber, onions and olives in a bowl.
- Top with feta cheese.
- Mix dressing ingredients in small bowl and drizzle over salad.
- Toss to combine.
