If you’re in a hurry and need a meal fast, make this Quick Low Carb Omelette. Use whatever vegetables you have on hand or just use cheese if you have nothing else. It’s not just for breakfast either…any time of day is a good time for this meal.
If you have some Quick and Easy Hollandaise Sauce on hand, it’s delicious on top for added fat and flavour.
Quick Low Carb Omelette
This is delicious drizzled with my easy hollandaise sauce 🙂

Ingredients
- 2 large egg
- 1 tbsp Heavy cream 38% M.F.
- 1 tsp Extra virgin olive oil
- 1 cup Baby spinach
- 1/2 cup Cheddar cheese, sharp, shredded (or whatever cheese you prefer)
Instructions
- Heat oil in a small frying pan.
- Meanwhile, mix eggs with heavy cream and salt and pepper, in a bowl and add to hot frying pan.
- On one half of the egg mixture, place spinach and cheese.
- Cook for a few minutes until the egg is firm enough to gently lift. Fold the 'plain' half over the top of the spinach/cheese half.
- Cook a few minutes more to allow the cheese to melt.
- Place on plate and drizzle with hollandaise sauce (optional).
Notes
Use other veggies if you like. Net Carbs per Serving: less than 2 grams
